Last weekend I was gifted 20 pounds of apples from my sister in law. Before she gave them to me I was thinking of getting 5 lbs. of apples so that I could make a recipe that I saw in the Eating Well magazine for the month of September. Slower Cooker Apple Chai Butter. The last month or two I have discovered the love of apple sauce again. I hadn’t had apple sauce since I lived with my parents. That was 22 years ago. I remember my dad would pour apple sauce over his cereal and eat them with all of the vitamins he took. I always thought that was weird, now that I am older. It doesn’t seem weird to me at all. Apple sauce helps make the giant pills go down. That is why I like it. I thoroughly enjoyed the process of cutting up the apples and slicing them. I saved the discards for one of my caregiver’s chickens who love eating the pieces of apple. Nothing went to waste in the process. What attracted me to the Eating Well magazine’s recipe is the use of cardamom and turmeric in their recipe. I try to eat as much turmeric as I can in my diet because of the anti-inflammatory properties in this spice. I have always loved Cardamom especially with cinnamon. The smell of just mixing the spices together made my mouth water with anticipation as I mixed it with the raw apple. I’ve never made apple butter/sauce before. I’m surprised at how easy and simple it is to do. The only hard part was cutting up the apples. Thankfully chopping is one of my favorite things to do in the kitchen. I still have 8 pounds of apples left. I’m thinking of making the pork bacon and apple recipe in the magazine too. I’m so excited that fall is in the air. The apple sauce tasted so good and I look forward to eating this throughout the fall season.

Slow Cooker Apple Chai Butter:

(I left out the Coriander and the salt in the recipe. I didn’t think it needed the salt. And I’m not a fan of coriander. If you don’t have sodium issues and you like Coriander feel free to add them in.) You will need a crockpot. Since I had 18 pounds of apples. I used two crockpots. A 4 quart and a 6 quart crockpot.

5 pounds of apples

2/3 cup of brown sugar

1 tablespoon pure vanilla extract

2 tablespoons ground cardamom (I used 2 drops of my cardamom therapeutic grade essential oil)

2 tablespoons ground cinnamon (in one crockpot I used 2 drops of therapeutic grade cinnamon essential oil. Because I ran out of the ground. Turned out awesome)

2 tablespoons ground turmeric

2 teaspoons ground coriander

½ teaspoon salt

Combine the apples, brown sugar, vanilla, cardamom, cinnamon, coriander, turmeric, and salt in the crockpot. Cover and cook, stirring two or three times during the cooking process for 5 hours.
